What has been said by Pollock got little bit distorted by others with their own takes. Did Muslim rulers try to impose religion on majority Hindus? Yes, they did as they did in Middle-east and then later in Persia. But India was a different animal. Culturally/traditionally, they were far more stubborn people as opposed to Persians. Did Muslim rulers impose Jijia tax on non-believers? The answer is yes too. So, I would not sugar coat Muslim rule as being ideal. They tried their best but failed to convince Hindus. Hindu intelligentsia did look down on Islam and that is why only poorer and lower caste Hindus went for Islamic message.Before we go any further, this is what has been said by S. Pollock.
